Chicken and Kransky Fritatta

  • 2 tbsp olive oil
  • 1 brown onion, finely diced
  • 1 tin corn kernels, drained
  • 2 medium potatoes, cut into small cubes
  • 1 medium sweet potato, cut into small cubes
  • 2 tbsp harissa spice
  • 8 eggs
  • 1 cup thickened cream
  • 1/2 cup dried parsley
  • 2 chicken breasts, chopped
  • 2 smoked kransky sausages, chopped into small discs
  • 1 cup tasty cheese , shredded


  • In a deep non stick frying pan add oil and cook chicken pieces, until cooked.
  • In the same pan add kransky, onion, sweet potato, potato , cook for 10 minutes, stirring often, till vegetables are softened.
  • Add corn kernels, harissa spice.
  • Whisk eggs, cream and parsley together in a bowl. Add cheese and season.
  • Pour mixture over vegetables and reduce heat to low. Cook for 15 minutes or until egg is just set.
  • Meanwhile pre heat grill on medium. Place pan under grill for 5 minutes or until egg has set and frittata is golden in colour.
  • Transfer to a plate and serve straight a way.
