The taste of parmesan, cheddar and pistachio in a tasty biscuit
125 grams unsalted butter, softened
1/2 cup parmesan cheese, grated
1 cup tasty cheese
1 large egg, lightly beaten
1 1/4 cup plain flour
1/4 tsp paprika
1/4 tsp salt
1/2 cup raw pistachio nuts, finely chopped
- Beat butter and cheeses together with an electric mixer until light and creamy. Gradually add egg, beating well between each addition. Using a spoon, stir in flour, paprika and salt until mixture just comes together.
- Turn onto a lightly floured bench and knead until smooth. Divide dough into four pieces and roll each out to 18cm in length. Roll in finely chopped pistachios and refrigerate for 15-20 minutes, to firm.
- Preheat oven to 160 C.Line 2 baking trays with baking paper.
Cut into 1 cm thick biscuits. Place on prepared trays and bake for 20-25 minutes or until golden. Cool completely on trays before storing in an airtight container.
