A quick and easy dish for a mid week meal.
500 grams beef mince
1 courgette, diced
1/2 red capscium, diced into small pieces
2 celery stalks, diced
1 Tbsp tomato paste
1/4 cup green onion, cut thinly
1/2 cup chicken stock
salt and pepper to taste
2 tsp olive oil
- Cut all vegetables the same size to get even cooking.
- In a large fry pan or wok on medium heat, add oil. Add mince and cook until mince is all cooked about 10 minutes.
- Add tomato paste, green onion, cook for 1 minute and then add all the vegetables and stock. Mix together and then simmer on low heat for 20 minutes or until vegetables are tender. Check seasoning.
Serve this with baked potato or salad.
