A quick and healthy stir fry in less than 30 minutes.
250 grams fresh or frozen large raw prawns with tails on
1/2 onion, chopped
1 bunch asparagus spears
1 carrot, cut into thin matchsticks
1 red chilli, seeds removed, cut thinly
10 snowpeas, sliced into strips
2 tsp light soy sauce
2 tsp oyster sauce
1 tsp sesame oil
2 tsp canola oil, for cooking
1 pkt noodles, soak in hot water
2 spring onion, cut into small pieces
1 packet baby spinach
- Prepare noodles by soaking them in a bowl with hot water, mix them with a fork to separate and drain.
- In a wok add 1 teaspoon of oil on high heat. Add asparagus spears and stir fry for 1 minute. Remove from heat and set aside on a plate.
- Add last teaspoon of oil to wok on high heat. Add the prawns and stir fry for 3 minutes or until prawns are cooked. Add vegetables, sauces, noodles and lastly baby spinach and cook until spinach has wilted. Remove from heat and serve in bowls .
