A easy potato, chorizo and parsley tortilla, cooked in a 20cm fry-pan to get a nice thickness for 2.
2 potatoes, medium, peeled thinly sliced
1 Tbsp olive oil
1 onion, finely chopped
1 chorizo sausage, chopped
4 eggs, lightly beaten
1/2 bunch parsley, chopped
- Cook potato until tender. Drain well.
- Heat 1 tablespoon olive oil in pan and cook onion until softened. Add chorizo and cook for a few minutes, then stir in parsley.
- Beat eggs and season really well. Tip potato,onion and chorizo into the bowl, mix, stir and cook for 5 minutes, flip and cook other side. This is a great size ideal for 2 people.
