Ingredients
2 Tbsp vegetable oil
1 brown onion, finely chopped
2 garlic cloves crushed
2 Tbsp Massman curry paste
500 grams lamb mince
400 gram can tin tomatoes
1 cup frozen peas
1 Quantity of Flat bread recipe
Directions
- Heat oil in a large saucepan over medium-high heat. Add onion and cook, stirring, for 3 to 4 minutes or until soft. Add garlic and cook for 1 minute. Add curry paste and cook, stirring, for 1 minute or until aromatic.
- Add lamb mince and cook, stirring with a wooden spoon, for 4 minutes or until browned. Add tomatoes and bring to the boil.
- Reduce heat to medium. Cook, uncovered, for 5 minutes or until liquid has almost evaporated. Stir in peas and cook for 1 minute or until peas cooked through. You can either spoon curry over rice or mix rice with the mince mixture. Enjoy with the flat bread.
