Ingredients
2 cups self raising flour
1 tsp baking soda
1 tsp ground cinnamon
3/4 cup buttermilk
1/2 cup caster sugar
1/4 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 overripe banana, mashed
1 cup fresh or frozen berries
Directions
- Preheat oven to 190 C/170 C fan forced. Grease and 8 hole mini loaf pan. Spray baking spray in the mini loaf pan.
- Sift the flour, baking soda and cinnamon in a large bowl. Stir in sugar. Whisk buttermilk, oil, eggs, vanilla and mashed banana in a medium bowl. Add wet ingredients to flour mixture. Stir until just combined. Fold in berries.
- Spoon into prepared mini loaf pan. Smooth top.
Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes. Turn , top side up, onto a cake rack to cool completely. Store in an airtight container at room temperature.
You can eat them just plain or with a easy icing on top.
