Mini banana & mixed berry bread.


These are a easy and tasty mini loaves . For all those that enjoy all the goodness of banana and berries. Make a extra batch to freeze.

  • 2 cups self raising flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 3/4 cup buttermilk

  • 1/2 cup caster sugar

  • 1/4 cup vegetable oil

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 overripe banana, mashed

  • 1 cup fresh or frozen berries


  • Preheat oven to 190 C/170 C fan forced. Grease and 8 hole mini loaf pan. Spray baking spray in the mini loaf pan.
  • Sift the flour, baking soda and cinnamon in a large bowl. Stir in sugar. Whisk buttermilk, oil, eggs, vanilla and mashed banana in a medium bowl. Add wet ingredients to flour mixture. Stir until just combined. Fold in berries.
  • Spoon into prepared mini loaf pan. Smooth top.
    Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes. Turn , top side up, onto a cake rack to cool completely. Store in an airtight container at room temperature.
    You can eat them just plain or with a easy icing on top.
