Lemon curd cupcakes
Ingredients
- 125 g butter or margarine softened
- 125 g caster sugar
- 2 eggs
- 185 g self- raising flour
- pinch Aof baking powder
- 1 lemon rind grated and juice
- 1/4 cup milk
- 4 tbsp icing sugar
- Homemade lemon curd or shop brought
- Icing sugar to decorate
Instructions
- Pre-heat oven 160 C. Using a muffin tin, put muffin cases in tin Beat together the butter, sugar, eggs, flour, baking powder, lemon rind & juice and milk. Mix till a soft consistency. Fill cases 2/3 full and cook in oven for 25-30 minutes. Leave in the tin to cool for 5 minutes, then transfer to a cake rack to cool. Cut a hole on the top fill with 1 tsp curd, replace top and sprinkle with icing sugar.
