Pork & Cauliflower Curry
Ingredients
- 500 grams pork cut into 3 cm pieces
- 2 brown onions cut into wedges
- 2 cloves garlic crushed
- 1 tbsp fresh ginger finely grated
- 1/2 cup korma paste
- 400 gram can diced tomatoes
- 1 head cauliflower diced small florets
- 1 cup frozen peas
Instructions
- Heat a large flameproof casserole pan over high heat. Cook pork pieces in 2-3 batches turning occasionally, for 5 mins or until brown all over. Transfer to a plate.
- Add onion, garlic and ginger to the pan. Cook, stirring for 2 mins or until onions soften slightly. Add curry paste. Cook, stirring for 1 min or until aromatic.
- Return the pork to the pan. Add tomato, coconut milk and cauliflower. Cover and cook for 2 hours or until pork is nice and tender. Stir in the peas. Season. Serve in bowls with some brown rice.
