I love fruit and nut loaves a lot, so I found this recipe and adapted it. It is great tasting and better after a couple of days if there is any left. Can be eaten plain or with butter.

Ingredients
1 cup sugar
50 grams butter
1 cup raisins
1 cup dates, chopped
1 Tbsp golden syrup
1 1/4 cups water
1 tsp mixed spice
1 tsp ground ginger
1/2 cup walnuts, roughly chopped
1/2 cup macadamias, roughly chopped
1/2 tsp vanilla extract
1/4 tsp salt
2 cups flour
1 tsp baking soda
1 tsp baking powder
Directions
- Preheat oven to 170 C. Line a 23 cm x 14 cm loaf tin with baking paper.
- Place sugar, butter, raisins, dates, golden syrup and water in a large pot. Bring to a boil and simmer for 5 minutes. Set aside and allow to cool for 10 minutes.
- Stir mixed spice, ginger, walnuts, macadamia nuts, vanilla and salt into the date mixture. Add flour , baking powder and baking soda and mix to combine.
- Pour into loaf tin and bake for 1 hour or until a skewer inserted in the centre comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
