Potato Discs
I wanted to try something different with potatoes and came across this recipe, which I called potato discs. They are so easy to make and you can use what ever fillings you like. I have since made these several times. These are a lovely change from potato mash. A great filling of mozzarella cheese and dried rosemary.
Ingredients
- 4 medium potatoes, peeled, cut into pieces
- 80 grams cornstarch
- 1 tbsp dried rosemary
- 1/2 cup mozzarella cheese, grated
Instructions
- In a pot add chopped potatoes. Add cold water and boil for 15 minutes or until soft.
- Drain potatoes and mash potatoes with butter. Add rosemary and cornstarch. Mix potato mixture together. Roll into 6-8 balls, than flatten out. Add 1 tablespoon of mozzarella to the centre and enclose the ball and than flatten into a disc.
- In a non stick fry pan add 1 tablespoon oil on medium heat. Add 4 discs into pan and cook 5 minutes on each side or until a nice golden colour. Remove and keep covered to keep warm. Finish cooking remaining potato discs.
- Either eat these on their own or a side with a main meal.
