Honey Soy Chicken

Honey Soy Chicken with a cabbage slaw

Ingredients
  

  • ¼ cup runny honey
  • tbsp soy sauce
  • 2 tsp fresh berries finely grated
  • 500 grams boneless skinless chicken thighs
  • ½ tsp sesame seeds
  • 500 grams microwaveable brown rice

Cabbage Slaw

  • 2 tbsp runny honey
  • 1 tbsp fish sauce
  • 1 whole lime rind finely grated and juiced
  • 1 green cabbage finely shredded
  • 1 carrot thinly sliced
  • ½ green capscium thinly sliced
  • 1 snow peas sliced thinly

Instructions
 

  • Place honey , soy sauce and ginger into a small pan. Bring to the boil over high heat, cook for 2 minutes or until reduced and slightly thickened. Set aside for 5 minutes to cool slightly.
  • Meanwhile, preheat oven to 200C. Line a large baking tray with baking paper and place a wire rack on top. Place chicken on rack and brush with the honey mixture. Scatter sesame seeds over chicken. Roast for 20-25 minutes or until cooked . Loosely cover with foil, and rest for 5 minutes.
  • Make slaw, combine chilli, honey, fish sauce , lime rind and juice into a small bowl. Set aside. combine remaining ingredients in a bowl. When ready to serve cook rice according to packet instructions and place in a serving bowl. Gently toss a third of the dressing with slaw and place over rice. Top with slice chicken and serve with remaining dressing.
