Meatloaf with a Barbecue Sauce
Ingredients
- 500 grams sausage meat
- 500 grams beef mince
- 2 whole brown onions grated
- 1 cup fresh breadcrumbs
- 2 tsp mild curry powder
- 1 Tbsp parsley chopped
- 1 egg lightly beaten
- ¼ cup milk
- ¼ cup water
Sauce
- ½ cup water
- ½ cup tomato sauce
- ¼ cup worcestershire sauce
- ¼ cup brown sugar
- 2 Tbsp white vinegar
- 30 grams butter
- 2 Tbsp lemon juice
Instructions
- Preheat oven to 180C.
- Combine sausage meat, beef mince,breadcrumbs, onion, curry powder, parsley, salt & pepper, and lightly beaten egg in bowl. Beat until mixture is well combined. Gradually add milk and water, continue beating until mixture is very smooth.
- Shape meat mixture into loaf, place either in a greased baking dish, with meatloaf put onto foil and then a baking tray. Bake in oven for 30 minutes.
- Remove from oven, carefully pour off any surplus fat. Pour sauce over meatloaf, return to oven, bake for further 45 minutes, basting frequently with the sauce.
- Serve hot with vegetables or cold with salad
