Ingredients
  

  • 4 bacon rashers finely chopped
  • 1 red onion finely chopped
  • ½ red capsicum finely chopped
  • 200 grams green beans cut into pieces
  • 1 zucchini grated
  • 4 large eggs lightly whisked
  • 1 medium sized sweet potato grated
  • 1 cup self raising flour
  • 1 cup cheese grated
  • ¼ cup milk
  • 2 tbsp olive oil
  • Salt & pepper to season

Instructions
 

  • Pre-heat oven to180C. Grease and line a lamington tin with baking paper.
  • Heat a medium fry pan over medium heat.
    Add onion and bacon and capsicum and cook until onion is soft.
    Blanch beans in a pan of boiling water for 3 minutes and then cool in running cold water, set aside and then cut.
  • In another bowl add flour, zucchini, sweet potato, cheese and beans.
    Add bacon mix to dry ingredients and stir well till all combined.
    Whisk the eggs & milk and oil.
    Add to the dry ingredients and stir to combine. Season.
  • Pour mix into prepared tin and bake in oven for 45 minutes. Serve at room temperature with a mixed salad.
