Vegetable Slice
Ingredients
- 4 bacon rashers finely chopped
- 1 red onion finely chopped
- ½ red capsicum finely chopped
- 200 grams green beans cut into pieces
- 1 zucchini grated
- 4 large eggs lightly whisked
- 1 medium sized sweet potato grated
- 1 cup self raising flour
- 1 cup cheese grated
- ¼ cup milk
- 2 tbsp olive oil
- Salt & pepper to season
Instructions
- Pre-heat oven to180C. Grease and line a lamington tin with baking paper.
- Heat a medium fry pan over medium heat.Add onion and bacon and capsicum and cook until onion is soft. Blanch beans in a pan of boiling water for 3 minutes and then cool in running cold water, set aside and then cut.
- In another bowl add flour, zucchini, sweet potato, cheese and beans. Add bacon mix to dry ingredients and stir well till all combined.Whisk the eggs & milk and oil. Add to the dry ingredients and stir to combine. Season.
- Pour mix into prepared tin and bake in oven for 45 minutes. Serve at room temperature with a mixed salad.
