Blueberry & Strawberry Muffins

  • 2 cup plain flour
  • 1 cup caster sugar
  • 1/4 cup oil veg or canola
  • 1 tsp lemon rind
  • 1.5 cup blue berries
  • 4 tsp baking powder
  • 1 egg
  • 1.5 cup milk
  • 2 tsp lemon juice
  • 6 strawberries fresh, chopped


  • Pre heat oven to 200C
  • Mix all ingredients in a large bowl until combined. Don’t over mix or muffin will be tough and not rise evenly.
  • Spoon into a greased deep muffin tin. Bake for 15-18 minutes.
  • Cool on wire rack and dust with icing sugar.
