Pre-heat oven to 180C. Line a 8 inch loaf tin with baking paper allow to overhang on the sides.
In a large mixing bowl, mix coconut oil, honey, and vanilla extract together.
Add mashed bananas, egg, flour, baking powder, baking soda, chopped apricots and peaches and salt and beat together until mixture is combined.
Pour mixture into a loaf tin . Smooth the top.
Bake for 1 hour or when a toothpick is inserted and it comes out clean.
Allow banana bread to cool in tin for 10 minutes. Turn out onto a cake rack to cool completely.
