Chicken Maryland’s in a lemongrass, chilli sauce with rice and vegetables


Use of chicken Maryland are great for this, but any chicken pieces you have will still be ok.

  • 4 chicken Maryland’s

  • 2 lemongrass stalks, whit part only, finely sliced

  • 2 long red chillies, deseeded, finely sliced

  • 2 Tbsp brown sugar

  • 2 Tbsp honey

  • 2 Tbsp sesame oil

  • 2 tsp hot chilli sauce

  • 3 tsp apple cider vinegar

  • 1 Tbsp fresh ginger, finely grated

  • 1/2 cup soy sauce

  • 1 tsp white pepper

  • 4 tsp lemon juice

  • 2 Tbsp oil, cook chicken


  • Preheat oven to 180C.
  • In a large non stick frying pan, one that is able to go in the oven. Add oil on medium high heat, brown chicken on all sides for about 5 minutes until a nice brown colour.
  • Add all the sauce ingredients together in a bowl and when chicken is browned, add sauce to the chicken and put in the oven.
  • Bake the chicken in the oven for 35 minutes or until chicken is cooked.
  • Serve this dish with brown rice and vegetables.
