Use of chicken Maryland are great for this, but any chicken pieces you have will still be ok.
chicken MARYLAND’S in a lemongrass, chilli sauce
4 chicken Maryland’s
2 lemongrass stalks, whit part only, finely sliced
2 long red chillies, deseeded, finely sliced
2 Tbsp brown sugar
2 Tbsp honey
2 Tbsp sesame oil
2 tsp hot chilli sauce
3 tsp apple cider vinegar
1 Tbsp fresh ginger, finely grated
1/2 cup soy sauce
1 tsp white pepper
4 tsp lemon juice
2 Tbsp oil, cook chicken
- Preheat oven to 180C.
- In a large non stick frying pan, one that is able to go in the oven. Add oil on medium high heat, brown chicken on all sides for about 5 minutes until a nice brown colour.
- Add all the sauce ingredients together in a bowl and when chicken is browned, add sauce to the chicken and put in the oven.
- Bake the chicken in the oven for 35 minutes or until chicken is cooked.
- Serve this dish with brown rice and vegetables.
