Chicken Maryland with the tastes of citrus. The chicken is cooked in the air fryer or you can bake in the oven.

Ingredients
6 chicken Maryland
1 Tbsp olive oil
2 Tbsp orange marmalade jam
1/4 cup citrus juice ( lemon, lime, orange)
1/2 cup chicken stock
1 orange, thinly sliced
1/2 lime, thinly sliced
1/2 lemon, thinly sliced
2 bunches broccolini, steamed
Directions
- Pre heat Air fryer 180 C. Preheat air fryer for 5 minutes. Line the base of the air fryer with the chicken. Cook for 30 minutes. After 15 minutes, check chicken and turn over. Baste chicken with the thickened sauce. Add citrus slices. Cook for another 15 minutes or until chicken is cooked. Use a meat thermometer to check chicken is cooked.
- In a separate saucepan, add marmalade, citrus juice and stock. Bring to the boil. Season with salt and pepper. Reduce the sauce and thicken with 1-2 teaspoons cornflour and 2 teaspoons water, mixed together. Pour into sauce and allow to thicken, remove from stove, set aside.
- Steam the broccolini .
Serve with chicken and citrus sauce and citrus slices.
