Ingredients
210 grams plain flour
1 1/2 tsp baking powder
1 tsp baking soda
3 large eggs, separated
115 grams unsalted butter, melted and slightly cooled
1/3 cup white sugar
420 mls buttermilk
1 tsp vanilla extract
toppings: butter, maple syrup
Directions
- Preheat the waffle maker onto your highest temperature. In a large bowl, combine the flour, baking powder, baking soda and salt. Set aside. In another bowl, whisk the egg yolks, butter, sugar, vanilla and buttermilk together until combined. Pour the wet ingredients into the dry ingredients and whisk gently until smooth. Do not over mix.
- In a medium bowl, whisk the egg whites until stiff peaks form. Using a rubber spatula, gently fold in the egg whites into the batter.
- Pour batter into each well of the waffle maker, or less if your waffle maker is smaller and close the lid. Cook waffles until golden brown and crisp, 5-6 minutes. Transfer the cooked waffles to a plate and keep them covered to repeat making the rest of the batter. Serve the waffles with your favourite toppings.
