Lamb and Vegetable Parcels
Ingredients
- 4 sheets frozen puff pastry
- 500 grams lamb mince
- 2 cloves garlic chopped
- 2 tbsp veg oil
- 2 tbsp tomato paste
- salt & pepper to taste
- 1 brown onion chopped
- 1/2 tsp crushed chilli
- 1 tsp smoked paprika
Instructions
- Pre heat oven to 200 C. Peel carrot, potato, cut into cubes of the same size, add peas and cook till soft.
- Chop onion and garlic, cook in veg oil on low heat to soften. Add lamb mince and cook till meat is cooked.
- Add salt and pepper, smoked paprika, tomato paste and chilli to meat. Add mixed vegetables and lastly currants and mix to combine. Allow to cool.
- Roll out pastry to squares add filling, fold up like a parcel and put parcels with the seams underneath.
- Add egg wash to top of parcels and sprinkle nigella or sesame seeds on top.
- Put on a tray with parchment paper and bake 30-35 minutes or until golden in colour. Makes 8
