Ginger Crunch
Ingredients
- 150 grams butter
- 1/2 cups caster sugar
- 1 1/2 cup plain flour
- 2 tsp baking powder
- 1 tsp ground ginger
Ginger Icing
- 150 grams butter
- 1 1/2 cup icing sugar
- 1/4 cup golden syrup
- 6 tsp ground ginger
Instructions
- Pre heat oven to 190o C Grease a 20x30 cm sponge roll tin. Cream butter and sugar until light and fluffy. Sift flour, baking powder and ginger together. Mix into creamed mixture. Turn dough into tin and press down to make it smooth with the back of a spoon. Bake for 20 -25 minutes or until golden. Pour hot ginger icing over the hot base and cut into squares while still warm. To make ginger icing put all ingredients into a saucepan and heat until butter is melted.
