Lamb and Vegetable Parcels
Ingredients
- 4 sheets frozen puff pastry
- 500 grams lamb mince
- 2 cloves garlic chopped
- 2 tbsp veg oil
- 2 tbsp tomato paste
- salt & pepper to taste
- 1 brown onion chopped
- 1/2 tsp crushed chilli
- 1 tsp smoked paprika
Instructions
- Pre heat oven to 200 C. Peel carrot, potato, cut into cubes of the same size, add peas and cook till soft. Chop onion and garlic, cook in veg oil on low heat to soften. Add lamb mince and cook till meat is cooked. Add salt and pepper, smoked paprika, tomato paste and chilli to meat. Add mixed vegetables and lastly currants and mix to combine. Allow to cool. Roll out pastry to squares add filling, fold up like a parcel and put parcels with the seams underneath. Add egg wash to top of parcels and sprinkle nigella or sesame seeds on top. Put on a tray with parchment paper and bake 30-35 minutes or until golden in colour. Makes 8
