Cherry and Coconut Friands
Ingredients
- ½ cup caster sugar
- ½ cup self raising flour
- ½ cup desiccated coconut
- ¼ cup almond meal
- 4 egg whites
- 125 grams butter melted
- ½ tsp vanilla extract
- Frozen cherries 2 for each friand
Instructions
- Pre-heat oven 200C. Grease a 12- cup friand tray or muffin tin. Combine sugar, flour, coconut and almond meal in a large bowl. Add egg whites and use a wooden spoon to stir to combine. Add melted butter and stir to combine. Spoon mixture among prepared pans. Place 2 frozen cherries on top and press to indent into cake mixture. Bake for 15 minutes or until a skewer inserted into the centres comes out clean. Remove from the oven and place on a wire rack to cool slightly. You can use what- ever fruit you like or have on hand.
