Devilled Chicken Sausages
Ingredients
- 1 tbsp olive oil
- 8 chicken sausages
- 1 brown onion halved, sliced
- 1 green apple sliced
- 1/4 cup tomato sauce
- 2 tbsp worcestershire sauce
- 2 tbsp cornflour
- 1/2 tsp curry powder I used a mild curry powder
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 tbsp brown sugar
Instructions
- Heat the oil in a large frying pan and cook the sausages for 4-5 minutes over a low to medium heat until browned. Add the onions and pear, then cook for a further 2 minutes – drain off any excess oil.
- Combine the tomato sauce, cornflour, Worcestershire sauce, spices and brown sugar with 2 cups of water, then whisk to mix well.
- Pour the sauce mix into the pan and mix well. Cover and simmer gently for 8-10 minutes, stirring occasionally until the sausages are cooked and the sauce thickens.
- Serve the sausages over couscous or brown rice and seasonal greens.
