Slow Cooked Pork and Lentil Curry
Ingredients
- 500 grams pork cut into cubes
- 2 Tbsp oil
- 1 lge onion chopped finely
- 2 cloves garlic crushed
- 1 Tbsp ground cumin
- 1 Tbsp mild curry powder
- 1 tsp ground tumeric
- 2 cans brown lentils liquid drained
- 1 can coconut milk
- 4 carrots cut into 1cm pcs
- 1 cup green beans cut in half
- 1 1/2 cups chicken stock
- 1 can tin tomatoes
- salt & pepper to taste
- parsley for garnish
- 1 green capscium chopped fine
Instructions
- Cut pork into cubes. In a large pan add oil and cook pork until cooked and browned. About 5 minutes. Set aside in a bowl. In the same pan add onion and garlic, and spices. Cook until aromatic. Return pork back to pan. Add green capscium, carrots, lentils, coconut milk, chicken stock, tin tomatoes,salt & pepper and cook either in a slow cooker or casserole pan on low for about 3 hours, or until pork is cooked and tender. Serve with brown rice on the side.
