This is a quick and easy meal. You don’t need the pasta I used, just whatever you have in the cupboard. All cooked within 15 mins.
Tomato & Aubergine Collezione Pasta
Ingredients
- 250 grams pasta
- 1/2 aubergine cut into cubes
- 2 red peppers store brought , cut into small cubes
- 1/2 tin tomatoes
- salt & pepper to taste
- 3 tbsp olive oil
- 2 tbsp fresh parsley finely chopped
Instructions
- In a large saucepan add water and salt. Bring water to the boil and cook pasta for about 11 minutes. In a medium frypan add 3 tbsp oil and heat to a medium high. Add aubergine and cook for 2 minutes until light brown. Add chopped capsicum, tomato and seasoning. When pasta is cooked, drain and add tomato mix to pasta and serve.
