My take on a Spanish Tortilla


A great tasting potato tortilla with chorizo.

  • 400 grams potatoes, thinly sliced

  • 1 Tbsp olive oil

  • 2 chorizo sausage, thinly sliced

  • 1 brown onion, thinly sliced

  • 3 eggs, lightly beaten

  • 300 mls cream

  • 4 green onions, thickly sliced

  • 1/2 cup mozzarella, grated


  • Peel and thinly slice potatoes and cook until just tender.
  • Heat oil in medium fry pan and saute onions until softened. Add thinly sliced chorizo sausage and cook, stirring until crisp. Drain mix on absorbent paper.
  • Whisk eggs with cream, green onion and cheeses.
  • In a deep baking dish, layer potatoes, add chorizo and onions, then cream mixture. Season with salt and pepper. Repeat until all ingredients are all used. Sprinkle some more cheese on top.
    Bake in a 200 C oven for 30-40 minutes or until golden on top.
