This is a recipe I adapted of gingerbread men with the taste of spices and just a taste of lemon. You can either decorate these or leave them like they are.

Ingredients
125 grams unsalted butter, chopped
1/3 cup brown sugar
1/3 cup golden syrup
1 egg
2 1/2 cups plain flour
2 Tbsp ground ginger
2 tsp cinnamon
1/4 tsp ground cloves
1 tsp baking soda
1 medium sized lemon, finely grated zest
- Icing
1 egg white
2 cups pure icing sugar, sifted
Directions
- Melt butter, golden syrup, brown sugar together in a saucepan, stirring until smooth. Cool slightly.
- Whisk egg and butter in a large bowl. Sift flour, baking soda and spices over the wet ingredients and mix until combined into a smooth dough. Flatten into a disc shape, cover with cling wrap and refrigerate for 30 minutes or until just firm.
- Roll out dough on a floured surface to 1/2 cm thickness. Cut out gingerbread people cutters and carefully transfer onto a baking tray lined with baking paper. Bake at 180 C for 8-10 minutes or until cooked and lightly browned. Cool for 5 minutes on trays before transferring to a cake rack to cool completely.
- Icing
- If you want to decorate these gingerbread men. Beat egg white until foamy then gradually beat in icing sugar until piping consistency. Spoon into a piping bag and use to decorate cooled gingerbread.
