Bring the family together with lamb koftas for a mid week meal. Pair this with a Lebanese flat bread, rice and side salad.
Ingredients
1 small brown onion, grated
500 grams lamb mince
1 tsp ground cumin
1 egg, lightly beaten
1 clove garlic, crushed
season with salt and pepper
1/3 cup finely chopped fresh flat-leaf parsley
1 tsp ground coriander
1/2 cup fresh breadcrumbs
2 large or medium tomatoes, sliced thinly
1/2 medium onion, thinly sliced
1 cup finely shredded lettuce
1 Tbsp olive oil
season with salt and pepper
Directions
- Combine onion, mince, parsley, cumin, coriander, egg, breadcrumbs and garlic in a bowl. Mix to combine. Season with salt and pepper. Roll level tablespoons of mixture into balls. Place on a plate.
- Heat an non stick fry pan on medium high. Add oil. Add koftas to pan. Cook, turning occasionally, for 10 minutes or until cooked through. Transfer to a large baking tray. Cover with foil. Rest for 5 minutes.
- Cut lettuce, onion and tomatoes thinly. Layer in a dish with lettuce on the bottom with sliced onion and tomato . Garnish with flat leaf parsley. Season with salt and pepper and drizzle olive oil over top.
