Braised Pork with mash
Ingredients
- 1 pork scotch roast
- Salt & pepper to taste
- 1 tbsp olive oil
- 2 cups chicken stock
- 2 cloves garlic crushed
- 1 onion peeled & quartered
- 1 whole red capsicum finely chopped
- 2 tsp dried oregano
- 2 tsp ground cumin
- 2 tsp smoked paprika
- ½ tsp chilli flakes
- 400 g can diced tomatoes
- 1 tin red kidney beans rinsed
- 2 tbsp corn flour
- 2 tbsp water
- 500 g potatoes mash when cooked
Instructions
- In a pan with 1 tbsp oil on high heat sear pork on all sides until nice and golden brown.
- Remove pork from pan and put into a slow cooker.
- In a pan with 1 tsp oil cook on medium heat add onion, garlic and capsicum and cook until onion soft. Add stock, tin tomatoes for one minute and then put into slow cooker.
- Lastly add red kidney beans and cook in slow cooker for 4 hrs on high or 6 hrs high. After 4 hrs check meat and then put on a plate to rest covered with foil.
- Reduce the stock to half and thicken with some corn flour and water mixed together.
- Cook potatoes and then mash. Serve with shredded pork meat and gravy with mash.
