Peppered chicken strips & red capsicum
Ingredients
- 3 chicken breasts sliced thinly
- 4 tsp plus 3 Tbsp soy sauce
- 1 tbsp rice wine
- 3 tsp cornstarch
- 5 tsp vegetable oil
- 1 large onion sliced into thin strips
- 1 large red capsicum sliced into thin strips
- 1/2 tsp black pepper
- 1/4 tsp chilli flakes more if you like it with a lot of heat or less if you don’t
Instructions
- Slice chicken breasts into thin strips. Place in a bowl and add 4 tsp soy sauce, 1 tbsp cornstarch, and black pepper.
- Ina small bowl mix remaining soy sauce,2 tbsp cornstarch, 1 tbsp water. Set aside
- Heat a wok on high. Add 1 tbsp oil to wok, add chicken strips and cook in batches till lightly golden and chicken is cooked. Put on a plate and repeat till all chicken is cooked.
- Add 2 tbsp oil to wok cook sliced onion & capsicum cook for 1 min, add chicken strips, add soy mix, chilli flakes and cook till slightly thickened. Serve with rice. Serves 4
