Seeded mustard chicken with vegetables
Ingredients
- 1 chicken breast cut into bite sized chunks
- 2 carrots cut on diagonal
- 3 medium sweet potatoes peeled for mash
- 1/2 red capsicum cut into strips
- 1 small brown onion cut into strips
- 2 tsp seeded mustard
- 1/4 cup cream
- Salt & pepper to taste
- 1 cup cabbage sliced
- 2 tsp oil
- 2 cobs of corn
Instructions
- Peel vegetables and put into a large saucepan to cook. Cut chicken into small chunks. In a deep pan add oil. Add chicken to pan and cook till chicken no longer pink in colour. Add capsicum, onion and mustard and cook till they are soft and chicken is cooked. Mash sweet potato and serve on a plate with the vegetables.
