Duskies
A lovely chocolate biscuit with walnuts and coconut, with a lovely chocolate icing.
Ingredients
- 125 grams butter, softened
- 1 cup icing sugar
- 1 egg
- 1 1/4 cup plain flour
- 2 Tbsp cocoa powder
- 1 tsp baking powder
- 1/2 cup desiccated coconut
- 1/2 cup walnuts, chopped
Chocolate Icing
- 2 cups icing sugar
- 1/4 tsp butter, softened
- 2 Tbsp water
- 1/4 tsp vanilla extract
- 1 Tbsp cocoa powder
Instructions
- Preheat oven to 200C. Line a baking tray with baking paper.
- Beat butter and icing sugar until light and creamy. Add sifted dry ingredients, coconut and walnuts to creamed mixture. Mix well to combine.
- Place in small spoonfuls on the lined baking trays.
- Bake for 15 minutes. When cold sandwich together with a chocolate icing or any other cream filling.
Chocolate Icing
- Sift icing sugar and cocoa into a bowl. Add butter. Add sufficient water to mix to a spreadable consistency.
