Spicy pork bites
Ingredients
- 400 grams pork pieces with skin on, cut into bite sizes pieces
- 2 lebanese cucumber
- 1/4 cup caster sugar
- 1/4 cup lime juice
- 2 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 3 tbsp sweet chilli sauce, add more or less
- 1 whole mango, sliced for garnish on top
Instructions
- Cook the pork pieces until cooked and golden colour. To make the spicy sauce, combine the sugar, lime juice, fish sauce, vinegar and 2tbsp water in a small saucepan over low heat. Cook for 5 minutes or until sugar has dissolved and sauce thickens slightly. Stir in the sweet chilli sauce. Set aside to cool completely. Arrange pork & cucumber in a serving dish. Drizzle over sauce. I used brown rice and then stacked pork and cucumber on top. Drizzled the sauce and then put sliced mango on the side.
